Though the calendar will change to May in the middle of the week, I don’t think Spokane’s weather is quite ready to kick the “April showers” to the curb. So, because it’s supposed to be so dreary over here, we’re sticking to a more wintry meal plan with chowders and casseroles to fight off the late Spring chill. We’ve also got more pre-arranged dinner engagements than usual this week, so there might be a bit of improvising along the way (in other words, don’t be surprised if some of these things are back on the menu next week!).
Monday: Jalapeno Corn Chowder (didn’t get to this from last week’s meal plan)
Tuesday: Dinner out! It’s our anniversary!
Wednesday: Burritos with Cuban Black Beans
Thursday: Dinner out with friends
Friday: Vegetable Tamale Pies
Saturday: Crockpot Tofu in Peanut Sauce for me, chicken of some sort for Matt, and fried rice on the side
Sunday: Leftovers or something from the freezer
