Menu Plan Monday

Happy Week of Christmas! I love cooking around this time of the year because there’s always an excuse/need for freshly baked cookies, hearty soups, and those delicious foods you’ve been eagerly awaiting  since last Christmas.  While I’m still working out exactly what our Christmas Menu will be (undoubtedly it’ll be just as fancy as last year’s!), I do have some diverse dishes planned for the rest of the week to keep our taste buds guessing!

Monday:  Zucchini, Black Bean and Rice Skillet

Tuesday:  Pre-made ravioli and garlic bread

Wednesday:  Spiced Coconut Lentil Soup

Thursday: Vegetable Tamale Pies

Friday: Dinner out (or possibly getting together with some friends for some pre-Christmas festivities)

Saturday: Christmas dinner before Mass! Still have to figure out the menu for this one… but it’ll be special and awesome!

Sunday:  Leftovers and all day snacking, but I’ll probably make some Spinach Artichoke Dip as well!

  1. Even though I’m not a vegetarian, I love seeing vegetarian meal plans! That zucchini, black bean and rice skillet sounds yummy!

    I definitely enjoy looking through alternative diet meal plans, too! Some of the GF ones get really creative. I have high hopes for the skillet recipe – I figure you can’t go too wrong with rice and beans as a base!

      I have to tell you – I’ve made the dip at least 3 times now, and it’s always suuuuper popular and everyone wants the recipe! You’ve got a winner with that one. 🙂
