Welcome to the first week of October! I’m celebrating the beginning of Fall by not cooking a single thing that contains any pumpkin. Ha! I am making a conscious effort to try eating more healthfully this month, and I’m hoping these dishes will start it out right for me. There are a few new ones that I haven’t tried before, but next week I’ll probably get back to some more tried-and-true favorites.
Monday: Tofu and Black Bean Tacos with homemade tortillas
Tuesday: Broccoli-Quinoa Casserole
Wednesday: Baked proteins (chicken for Matt, tofu for me), Potatoes Au Gratin with some added garlic, and some fresh veggies on the side
Thursday: Ravioli (and meatballs for Matt) from the freezer and grocery store garlic bread
Friday: Spicy Vegan Potato Curry with rice
Saturday: Dinner out!
Sunday: Soup and grilled cheese sandwiches – supplemented with some leftovers, most likely!
