After Pig Out in the Park (as well as eating out before and after the event this weekend), I’m ready for some good home-cooked food. Plus I have some dresses I need to fit into in the relatively near future! I’m hoping to balance out the cheese-heavy casseroles with some bean-centric dishes over the course of the week – and keep plenty of leftovers in the fridge for when I return on Sunday night.
Monday: Ravioli Gratin with summer squash ravioli from Costco (based on this Real Simple recipe)
Tuesday: Tacos with Cuban Black Beans and sauteed peppers
Wednesday: Easy Crockpot Vegetarian Chili
Thursday: Curry full of fresh veggies over rice
Saturday: Leftovers for Matt, party time for me!
Sunday: Leftovers, or soup and grilled cheeses
