This week I’ve decided to go through my magazine-clipping binder and make some of the recipes that I saved but haven’t gotten a chance to try yet. I hope it’ll be a week full of fresh veggies and delicious food – and maybe we’ll get some new staples to add to our repertoire!
Monday: Sweet Potato Chili
Tuesday: Yukon Gold and Baby Spinach Masala
Wednesday: Veggie and tofu quesadillas
Thursday: Sweet Potato and Gruyere Turnovers
Friday: Grilling – probably a combo of fresh veggies and burgers – to end the week.
Saturday: Dinner out with family
