It’s been a long couple of weeks – lots going on, and lots to get done! (Healthful) food has kind of taken a back seat, and my waistline has definitely suffered. I’m hoping some good eating with an emphasis on homemade food will get me back on track and into a dress at the end of the weekend!
Monday: Tacos with some Cuban Black Beans, avocado and sour cream
Tuesday: Vegetarian Crockpot Chili
Wednesday: Chicken/tofu with roasted brussel sprouts and Sweet and Spicy Sweet Potatoes
Thursday: Pasta with roasted corn, arugula, and goat cheese
Saturday: Someone’s getting married! All food is on the fly for today.
