I found that last week I seriously over-estimated the amount of food that two people need to eat during the week (especially in the summer!). Instead of eating leftovers for lunch I’d often just grab half a cucumber and some hummus and feel just as full/satisfied. As a result, I’m cutting back on the cooking a bit this week, and stocking up on lots of fresh fruits and veggies to have options available when the inspiration strikes!
Monday: Freezer ravioli and veggies
Tuesday: Vegetarian Crockpot Chili
Wednesday: Spring Veggie Frittata (halved to take into account a small pan and only 2 bellies)
Thursday: Baked Tofu Bites, roasted veggies and quinoa/rice
Saturday: Grilling our farmer’s market steals!
