My hands still smell like food as I’m typing this, mostly because I made a potent (with garlic) black bean soup last night, followed by a Betty Crocker brownie mix. Both were delicious and hit the spot, and I’m hoping that the rest of this week’s recipes do the same. Most of these are old favorites,and just get better with age (and a few small tweaks as they’re made over and over again).
Monday: Miracle Lasagna (with some added spinach)
Tuesday: Potato Curry with rice
Thursday: Baked Tofu Bites for me, a stuffed chicken breast for Matt, and some quinoa and roasted veggies (I bought some brussel sprouts and a few sweet potatoes from the grocery this week)
Friday: Ravioli (Kirkland brand from the freezer)
