Menu Plan Monday

Last week I didn’t get to menu plan, and our diets (and wallets!) definitely suffered because of it.  It was just so hard to think about food – and walking around a grocery store – while recovering from the marathon.  So this week! This week we’re getting back on the planning wagon, and hopefully spending a bit less money and eating slightly better.

Monday:  Zucchini cakes and everything-but-the-kitchen-sink salads with some grilled protein (chicken or marinated tofu)

Tuesday:  Curried Quinoa with some added veggies and garbanzo beans

Wednesday: Vegetarian chili in the crock pot and some homemade rolls if I get around to it

Thursday: Baked Tofu Bites and stuffed chicken breasts (similar to this recipe) with couscous and salads

Friday:  Honey Lentils and more salads

Saturday:  Dinner out with friends

Sunday: Easter! Brunch will be the big meal today, so probably just leftovers.
