Menu Plan Monday

Whoa, totally learned my lesson!  I grossly over-estimated the amount of food needed to feed the two of us for a week.  With the leftovers from Monday’s and Tuesday’s cooking alone I barely needed to make anything for the rest of the week!  We’re toning it down this week, actually anticipating a day for leftovers, and trying to empty the fridge a bit since we’ll be traveling for the weekend.

Monday: Enchiladas – I’m still deciding if I’ll make two half-batches (one with chicken and one with black beans and tofu) or just one vegetarian batch

Tuesday: Pesto Mac and Cheese – hopefully I’ll have a recipe to post for this soon

Wednesday: Leftovers

Thursday: Something easy, like fried rice and roasted veggies

Friday – Sunday: Dinner out and about!
