On one of my old blogs, I diligently planned and posted our meals for every week. I loved spending time on the weekends researching and bookmarking new and interesting recipes to try, and we even found some of our go-to meals that way (sweet potato chili in particular comes to mind).
So anyway, because this is my blog and I do what I want, these are the recipes I plan on cooking/torturing Matt with this week. Can you tell I have some coconut milk and pumpkin to use up? 🙂
Monday: Coconut Curry Pumpkin Soup with rice
Wednesday: Coconut Red Beans and Rice with steamed veggies
Thursday: Tortellini with jarred pesto and/or marinara sauce
Friday: Pizza or dinner out
Saturday: Leftovers or freezer dinner (which means anything in the freezer, basically)
Sunday: Jenna’s Channa Masala with rice and steamed veggies
